Try this one for dinner tonight! After the beets are roasted, this easy salad of arugula, beets and carrots can be made in minutes. You can roast the beets the night before, and this healthy salad will be a snap.


Ingredients

  • 4 small beets
  • 1 small red onion, very thinly sliced
  • 6 carrots, shredded
  • 6 radishes, very thinly sliced crosswise
  • 4 oz baby arugula
  • 2 garlic cloves, minced
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1 Tbsp chopped fresh basil
  • 1 Tbsp chopped fresh thyme
  • 1/8 tsp salt
  • Black pepper to taste
  • 2 oz crumbled blue cheese
  • 1/4 cup chopped almonds
  • 1/4 cup shelled sunflower seeds
